Recipe of the Month: Greek Style Chicken

Whether or not it’s barbeque or picnic weather where you are, this Greek-inspired chicken bring the feeling of summer to your family dinner table and make a great sharing platter with a mix of salads and toasted pittas.

For the chicken marinade for two chicken breasts: 
  • 2 cloves crushed garlic
  • 3 tbsp lemon juice
  • 1 tsp dried oregano
  • 2 tbsp extra virgin olive oil
For the tzatziki dip:
  • 4 tbsp full fat greek yogurt
  • handful of fresh mint
  • 4inch length of cucumber
  • juice ½ lemon
  • 1 clove garlic
Serving suggestion; pitta bread, tomatoes, cucumber, avocado
1. Dice your two cloves of garlic & add in three tbsp lemon juice, 1 tsp oregano and 2 tbsp extra virgin olive oil to a bowl and mix.
2. Pan fry your chicken breast for a few minutes before placing into an oven dish.
3. Cover your chicken in the marinade.
4. Cover the chicken and cook for 25-30 minutes.
5. Whilst your chicken is cooking in the oven, mix together 4 tbsp full fat Greek yoghurt, handful of fresh mint, grated cucumber (press the cucumber in some kitchen towel to remove excess moisture), the juice from ½ a lemon and one clove garlic in a bowl.

6. Shred, chop or slice your chicken according to your baby’s age and weaning stage and drizzle some of the marinade from the dish on top.

7. Serve with some chopped avocado, cucumber, tomatoes, toasted pitta bread and enjoy!
